This recipe is one of our family favorites.
I might say that about most of the recipes I put up here. Lol! Congo bars are a super easy chocolate chip cookie bar that you can whip up in a mixing bowl with simple ingredients and a wooden spoon. Since they are bars, there is less time with the oven on in the heat of the summer. You can make them please anyone’s cookie preference by choosing chips, dried fruit, and nuts that suit their taste buds. The sky’s the limit. Peanut butter chips take them over the top.
This recipe is my sister’s go-to for almost any occasion. When she comes to visit, congo bars almost always arrive with her. Recently, the recipe was passed to the next generation when my granddaughter, Hero, made them as a thank-you gift for all the teachers she would be saying goodbye to after a great school year with them. They were a hit. I hope you feel the same way.

Congo Bars
Yields about 56 2-inch bars
Ingredients
- 2/3 cup neutral oil, avocado or canola
- 16 ounces brown sugar
- 4 eggs
- 2 teaspoons vanilla extract
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- At least 12 ounces (or more. Yum!) of chocolate chips
- Additional 1 cup dried fruit or nuts are entirely up to you.
Instructions
- Spray 13×18 inch jelly roll pan or cookie sheet with spray oil. Preheat oven to 375 degrees F.
- Combine oil and brown sugar in a medium mixing bowl or stand mixer. Mix until uniform consistency.
- Add the eggs and vanilla. Beat the mixture well combined.
- Add flour, baking powder, and salt. Stir until blended.
- Spread mixture onto prepared pan. Sprinkle chocolate chips. Add dried fruit or nuts if you like.
- Bake for about 20 minutes until lightly browned around the edges. Allow to cool for five minutes or so. Cut into squares and enjoy all by themselves or with coffee or milk. Yummy!
