Vanilla Ice Cream

I love ice cream.

So when I was gifted with an abundance of half and half, naturally my mind went directly to that sweat treat. I searched around for a recipe that worked with my pantry items and ice cream maker. The one I found was super simple. I decided to go with the basic vanilla this time, but who knows what the future will hold. My ice cream machine is a counter top Cuisinart, which makes about six servings in thirty minutes or so.

Ingredients
  • 3 3/4 cups half and half
  • 3/4 cup sugar
  • 1/4 salt
  • 1 1/2 vanilla extract
  • 3 tablespoons cornstarch
Instructions
  1. Whisk together half and half, the sugar, the salt, and the cornstarch in a saucepan.
  2. Heat over medium-high heat, stirring, until the mixture starts to thicken and barely reaches a boil, about 5 minutes. Immediately reduce heat to very low and stir for about 5 minutes more or so until thick. Stir in vanilla.
  3. Chill for two hours.
  4. Pour into ice cream maker and freeze according machines instructions.
  5. Enjoy!

You can’t buy happiness, but you can buy ice cream, and that is pretty much the same thing.

    Now I want to buy an ice cream maker! I would like to add peanut butter to this. (Vanilla peanut butter is a combination that I don’t see in stores.) Thank you for sharing.

      You don’t see that and I think I’d like it too. You can do ice cream right in the freezer. Check the internet for instructions. Have a great day.
