I love ice cream.
So when I was gifted with an abundance of half and half, naturally my mind went directly to that sweat treat. I searched around for a recipe that worked with my pantry items and ice cream maker. The one I found was super simple. I decided to go with the basic vanilla this time, but who knows what the future will hold. My ice cream machine is a counter top Cuisinart, which makes about six servings in thirty minutes or so.
Ingredients
- 3 3/4 cups half and half
- 3/4 cup sugar
- 1/4 salt
- 1 1/2 vanilla extract
- 3 tablespoons cornstarch
Instructions
- Whisk together half and half, the sugar, the salt, and the cornstarch in a saucepan.
- Heat over medium-high heat, stirring, until the mixture starts to thicken and barely reaches a boil, about 5 minutes. Immediately reduce heat to very low and stir for about 5 minutes more or so until thick. Stir in vanilla.
- Chill for two hours.
- Pour into ice cream maker and freeze according machines instructions.
- Enjoy!
You can’t buy happiness, but you can buy ice cream, and that is pretty much the same thing.

Now I want to buy an ice cream maker! I would like to add peanut butter to this. (Vanilla peanut butter is a combination that I don’t see in stores.) Thank you for sharing.
